A member of the ginger family, Turmeric is a rhizome from a robust perennial native to Southern Asia. Madras turmeric is much darker in color, having a curcumin content that is high, making it a more effective color with excellent fresh turmeric flavor notes. Our Madras turmeric hails from Southern India, where much of this grade of turmeric is traded.
Throughout India and Southeast Asia and since antiquity, turmeric has been appreciated as a flavoring, a dye, medicine and valued in ritual and ceremonial occasions.

Our Madras turmeric more closely resembles the flavor of fresh turmeric as a somewhat earthy aroma and surprisingly delicate top notes of lemon and mint, reminiscent of its cousin ginger.

Fresh turmeric is crunchy; has gingery, citrus aromas and an agreeably earthy flavor with citrus overtones. Dried turmeric has a complex, rich, woody aroma with floral, citrus and ginger notes. The taste is slightly bitter and sour moderately pungent, warm and musky.
