Star Anise is a member of the magnolia family, native to Southern China and Vietnam. This beautiful star-shaped fruit is harvested when green (before they have ripened) and sun dried. During the drying, they turn a deep, reddish brown and their characteristic aroma and flavor fully develop.
Not to be confused with anise seed, star anise has a similar anise taste; however, it is quite pungent with a licorice-like aroma. Its flavor is sweet with mildly numbing effect, and the aftertaste is fresh and agreeable.
This pretty spice has a long history of both medicinal and culinary uses in Southeast Asia. Star Anise is a prized ingredient needed by the pharmaceutical industry. This spice contains a compound called Shikimic acid, which is an essential part of anti-influenza medications around the world. Extracting and processing this acid takes an entire year, so the cost of this spice is determined mainly by the global demand for influenza medications.
