AJOWAN

Trachyspermum ammi

Ajowan, native to southern India, is a small, annual umbellifer closely related to caraway and cumin. The seeds are a favorite spice throughout India, Pakistan, and Egypt.

 

Ajowan’s essential oil was the world’s primary source of thymol (an antiseptic phenol) until the introduction of synthetic thymol.

 

The seeds are small ridged, oval, grayish green to reddish brown, and resemble celery seeds. When crushed, Ajowan seeds have a strong, rather crude smell of thyme, the taste, primarily determined by thymol in the essential oil, is hot and bitter.  Chewed on their own, Ajowan seeds numb the tongue, so use only a few.
