Juniper is a prickly, evergreen shrub or small tree that grows throughout much of the northern hemisphere. It is a member of the towering cypress family, the only one with edible fruit.
The berries were used by enterprising Romans to adulterate pepper and were burned in the Middle Ages (and beyond) to clean the air of pestilence.
The aroma is pleasantly woodsy with a clean taste, a slight lingering but burning effect, and has hints of pine.

For the true gourmand, Juniper berries are best known as the flavoring for gin and other spirits.
To cook with them, slightly dry-roast, crushed, add coarse sea salt and minced garlic, and rub on pork loins, venison or other types of meat. It is also an essential ingredient in duck confit, use it to enhance the flavor of a red wine sauce.
Juniper berries traditionally have been used to “detoxify” the body and promote healthy digestion and skin health. Juniper has been used for indigestion and as a steam inhalant to treat bronchitis.
