Kerala Green Cardamom
In the shady monsoon forest of Kerala, one would see enveloped in the morning mist, the eloquent “Queen of Spices” Cardamom. Hand-picked by our group of smallholder farmers, who meticulously tend to each leafy shoots arising from the rhizome to harvest.
The Cardamom plant is a tropical perennial; its appearance is similar to ginger plant or lily and is native to the Western Ghats of India and Sri Lanka.
The flowers are borne on the stems that emerge at the base of the plant and tend to spread out, close to the base, almost on the ground. The small delicate white flowers are similar and enchanting like orchids. The pods or capsules form after the pollination of the flowers.
Dried cardamom pods are pale green with a papery husk. Inside, are three seed segments, each containing three to four black-brown, fragrant seeds.
The taste of cardamom is lemony and flowery with notes of eucalyptus due to cineole in the essential oil. Its scent is strong but mellow, fruity and penetrating.
Our small greenish-colored pods are unique and have a distinctive lemony scent. To get the maximum flavor, bruise the pods slightly to break them open. It's the perfect spice for several desserts, drinks and delectable cuisines. Cardamom is an essential ingredient in many Middle Eastern, Indian and African cuisines. Cardamom equally compliments a slew of savory and sweet foods, such as pastries, cakes, biscuits, sweet and milk pudding, stewed fruits, rice dishes, curries, and chai blends.
