Punjabi Tandoori Masala
Tandoori” refers to the method of cooking rather than a recipe.
Its a clay oven, usually a fire pit where the direct heat from a charcoal fire is reflected by the ceramic walls of the tandoori, which intensifies the heat and create a cooking environment that can easily reach over 600 degrees. The tandoori masala used in almost any savory tandoori dish starts with yogurt, it marinates the meat and keeps the spices in place.
“Masala” means a mixture or blend of spices. Tandoori also refers to the traditional marinade used in Northern India in the Punjab region. Today, almost every Indian restaurant in every corner of the world has a tandoori oven.

Punjabi Tandoori Masala Nirmalas Kitchen
I learned to make this Tandoori spice blend in Amritsar, the Indian state of Punjab and is one of my favorite Indian spice blends. Each time we blend it, part of the first batch is tested in cooking Tandoori Shrimp. We love the sunset color it gives to the finished dish, and when the cream is added, it’s a lovely pink.
Add with yogurt to create a marinade for chicken, fish or lamb. Our tandoori blend makes an excellent dry marinade for meats that are to be pan-fried, grilled, roasted or barbecued. Add depth to burgers, meatloaf, meat sauces, and pasta sauces. You can always create a dairy-free marinated with cashew or almond yogurt.
