Tunisian Spice Blend
Harissa is a fiery Tunisian blend, made predominantly made from hot chilies, an indispensable accompaniment to a wide variety of Tunisian foods. Mix one part of our harissa blend with two parts olive oil. (Adjust to create the consistency you desire.) Serve with crusty bread or pita bread, rice dishes and couscous. It is also an excellent substitute for mustard and mayonnaise on sandwiches. Or add a tablespoon or two to your mustard or mayonnaise to create delicious dips. Add our Tunisian Harissa to your favorite cheeses or olive oil for quick and easy dips. Use generously on pizza as a topping or as a dry rub on chicken.

On the dinner tables of almost every African country I visited, I saw many condiments, all laced with chilies.
While in Tunisian, I was invited to my driver’s home for lunch, in the city of Kairouan. He made a sandwich snack called cassecroûte, a freshly baked French bread stuffed with vegetables, olives, and boiled eggs, and laced with mouthwatering harissa.
After that addicting snack, I feasted on cassecroûte for the remainder of my travels in Tunisia. Finding pâtisserie, French-style cafés, is not a problem in Tunisia due to its former French occupation.
